When I dip, you dip, we dip.

Creamy Horseradish Sauce:
1 cup sour cream, full fat
3 1/2 tbsp prepared horseradish
1/4 cup mayonnaise
2 tbsp chives, finely chopped
1 lemon zest and ½ of juice
1 tbsp apple cider vinegar
1 tbsp dijon mustard
S&P to taste

Irish you can taste the love in this pickle brisket sammy! 🥪

P.S. don’t forget the green beer. Sláinte! 🍺

Recipe:
Smoked Pickle Brisket
3 lb brisket
3 qt pickle juice
1 tbsp fresh coarsely ground black pepper
1 tbsp whole coriander seeds
1 tbsp coriander powder
1/2 tsp whole yellow mustard seeds
Rye Bread
Swiss cheese

Sando Sauce
1/2 cup mayonnaise
1/4 cup ketchup-style
1 tbsp shallot
2 tsp prepared horseradish
1 tbsp Worcestershire sauce
1 tsp smoked paprika
1/4 tsp dry mustard
2 tbsp relish

Coleslaw
14 oz coleslaw mix
1/2 cup mayonnaise
2 tbsp sugar
2 tbsp lemon juice
1 tbsp white vinegar
1/4 tsp kosher salt
1/2 tbsp coarse ground black pepper
1 tsp celery salt

Instructions
1. Place brisket in mason jar, pour the pickle brine over brisket and let brine for 5 days.
2. After brining, remove the brisket from the brine and pat dry with paper towels. Place the
brisket, fat-side up.
3. In a spice grinder, coarsely grind all the spices. Cover the fat side of the brisket with the peppercorn-coriander mixture.
4. When ready to cook, set the Traeger to 225°F.
5. Place the brisket directly on the grill grates, spiced side up. Insert the MEATER probe into the
thickest part of the brisket and set the target temperature to 204°F.
6. Set custom alert to remove from the grill and tightly wrap in foil at 160°F. Return to the grill and continue cooking.
7. When MEATER tells you it’s time to remove from heat, allow it to rest before slicing.

Assembling
1. On a piece of rye bread, add sauce followed by slices of swiss cheese, then slices of pickled brisket topped with slaw and another slice of bread cut in half and enjoy!

Get ready to duck and cover because these breasts are fireee! 🔥

Duck breasts from @grandwesternsteaks! 🦆

Ingredients
2 duck breasts
2 tbsp Traeger’s Fin & Feather Rub
2 cups fresh strawberries
¼ cup water
½ cup honey
2 tbsp balsamic vinegar
S&P to taste

Meat
1. Preheat grill to 275°F. Score the skin of the duck and season both sides with Traeger Fin & Feather Rub.
2. Insert the MEATER probe and set up the cook on the MEATER app with your desired temperature (we did 130℉).
3. Place the duck breasts on the grate. Close the lid and cook until MEATER says it’s time to remove from heat.
4. Once done resting, sear duck breast skin side down in a hot pan until golden and crispy.

Strawberry Glaze Sauce
1. Wash strawberries thoroughly, remove the stems and cut in halves.
2. Place the strawberries into a saucepan and cook over low heat for ~10 minutes with water, stirring occasionally.
3. Off the heat, puree strawberries and strain through a chinois or strainer into the saucepan. Add honey and vinegar and reduce to your desired thickness.
