Ingredients:

Soy Honey Salmon

  • 2 pcs. fresh salmon
  • ⅓ cup soy sauce (78ml)
  • ⅓ cup honey (113g)
  • 2 tablespoons Dijon mustard
  • Drizzle of olive oil
  • 2 garlic cloves, minced
  • Pinch of salt and pepper

Dry Rub Salmon

  • 2 pcs. fresh salmon
  • 1 tablespoon Meat Church All-Purpose Rub
  • Pinch of salt and pepper
  • 4 tablespoons olive oil, divided
  • 4 cups cooked brown rice
  • 2 sweet potato, diced
  • 1 bunch broccolini
  • 1 bunch asparagus
  • 1 pack of cherry tomatoes
  • 1 lemon sliced for garnish

Instructions:

  1. Start off this delicious meal prep recipe by preheating the oven to 350°F (177°C) and generously grease a baking rack and pan, ensuring a seamless cooking experience.
  2. First up is the Soy Honey Salmon marinade! In a bowl, blend together soy sauce, honey, Dijon mustard, olive oil, minced garlic, and a pinch of salt and pepper. Let the flavors meld as you set the stage for an exquisite (& easy) batch of meal prep success!
  3. Gently place 2 pieces of fresh salmon filet into the mouthwatering marinade you just created, allowing them to soak up the flavors for at least an hour. This patient marination process ensures a succulent and flavorful outcome, you’ll love it!
  4. For the Dry Rub Salmon, generously season the fresh salmon filets with Meat Church’s All-Purpose Rub, along with a pinch of salt and pepper. Drizzle olive oil over the filets, ensuring an even coating on all sides. This step in the preparation of your salmon ensures no dry spots on the fish, promising a perfectly seasoned result.
  5. To monitor the salmon’s perfect cook, insert a MEATER probe from your MEATER 2 Plus or MEATER Plus into the thickest part of the filet, providing you with precise control over the cooking process. Meal prepping just got even easier!
  6. Elevate the dish further by adding a medley of roasted vegetables. Season asparagus, broccolini, diced sweet potato, and cherry tomatoes with olive oil, salt, and pepper. Arrange them on a baking pan, ready to be paired as vibrant and nutritious additions to your salmon.
  7. Strategically place the marinated and dry-rubbed salmon filets on a greased rack, positioned above the vegetable-filled baking pan. This arrangement allows for the flavors to fuse together in the oven. Yum!
  8. Slide both the tray and rack into the preheated oven and let them cook until the internal temperature of the salmon reaches 140°F (60°C), ensuring both the salmon and vegetables are tender and infused with savory goodness.
  9. Once the MEATER App has notified you that your salmon has finished cooking, remove the salmon and vegetables from the oven. Hooray!
  10. Now it’s time to let your salmon rest – it’s worked hard to taste this delicious! Allow the salmon to rest until the MEATER App alerts you to remove the probe.
  11. Complete the meal by adding cooked brown rice to meal prep containers, followed by the perfectly cooked salmon, diced sweet potato, and asparagus in two containers, and broccolini and cherry tomatoes in the remaining containers.
  12. As a finishing touch, garnish the containers with slices of fresh lemon, giving your meals a zesty burst of flavor that will complement the richness of the dish. Now, sit back, relax, and relish in the success of creating an easy, gourmet meal that is as delightful to the eyes as it is to the palate. Enjoy!
