Lobster Pizza | MEATER

Ingredients:

For lobster and topping

  • 1 colossal lobster tail or 4 smaller size tails  
  • 1 pound frozen pizza dough, defrosted 
  • 1 tablespoon Old Bay seasoning 
  • 3 tablespoons melted butter 
  • 1 cup shredded Mozzarella cheese
  • ½ cup Gouda cheese 
  • 1 cup shredded Gruyere cheese

For the sauce 

  • 2 pint heavy cream
  • 4 tablespoons unsalted butter cut into cubes
  •  ½ cup diced red onion
  • 4 cloves garlic minced
  • 3 tablespoons lemon juice
  • ½ cup white wine
  • 1 cup grated Parmesan cheese divided 
  • 2 tablespoons fresh tarragon 
  • Arugula to your liking  
  • 1 teaspoon Old Bay seasoning 
  • Salt and pepper to taste

Instructions:

  1. Begin by preheating your Traeger grill to 275°F (135°C). It’s time to make a lobster pizza to wow your boo’s stomach (or your own stomach)! 
  2. Next, remove the lobster meat from the lobster tails. Season the lobster meat generously with Old Bay seasoning and insert the probe of your MEATER 2 Plus into the thickest part of one of the tails. In the MEATER App, set the internal temperature to 122°F (107°C) and begin the cook. Approximately halfway through the cook, baste or inject the lobster tails with melted butter. Let them cook until the MEATER App notifies you to remove the lobster tails from the heat!
  3. While your lobsters cook, add butter, red onion, minced garlic, lobster shells, and white wine to a large pan on medium heat and simmer for 3 minutes. Next, add in heavy cream until it thickens and season with Old Bay seasoning, salt, and pepper. Now, remove the shells.
  4. Once you have removed the shells, add in fresh grated parmesan cheese and mix well.  
  5. Now it’s pizza dough time! Roll out your defrosted pizza dough to your desired size. If you are using an oven, pre-heat it to 450°F (233°C) and then cook the pizza for 5 minutes on one side. If you have a Traeger Flatrock, cook the pizza dough on the oiled flat top at medium high heat for about 5 minutes on one side. 
  6. Remove from flat rock and add cream sauce, Mozzarella, Gruyere, Gouda, and lobster.
  7. Add a metal baking rack to your flat top or baking sheet and place pizza back to the heat and cook for 10 minutes or until the cheese is perfectly melted. Remove from heat and finish with arugula and more grated Parmesan cheese. 
  8. Enjoy fresh flat top pizza!
