Ingredients:

  • 10-12 drumsticks
  • 1 bottle of BBQ sauce
  • BBQ rub
  • 1/4 cup honey
  • 2 tbsp sriracha (1 tbsp for less spicy option)
  • Olive oil

Instructions:

  1. Start off this recipe by preparing your drumsticks to be transformed into lollipops. Begin by trimming each drumstick individually. Make an incision 2/3 of the way down from the top of the bone, carefully cutting through the tendons. Make a clean cut all the way around to remove the skin and cartilage from the top part of the bone.
  2. Next, gently push the meat and skin down to shape each drumstick into a perfectly round lollipop, perfect for easy holding and feasting! Yum!
  3. Drizzle a hint of oil over the chicken and generously coat with your favorite BBQ or chicken rub. Allow the drumsticks to sit at room temperature for 15 minutes, infusing them with your favorite rub flavors.
  4. Now, it’s time to fire up the grill and get cooking! Prepare your charcoal grill for 2-zone cooking, igniting the flames for these legendary lollipops. Insert the MEATER 2 Plus probe and set the desired temperature to 172°F (78°C) in the MEATER App. Position the drumsticks on the cooler side of the grill, allowing them to cook slowly and absorb the flavors of smoky succulence for 45 minutes to an hour.
  5. As the drumsticks reach an internal temperature of 145-150°F (63-66°C), it’s time to add the extra flavor. In a pot, combine BBQ sauce, honey, and sriracha, warming the sauce over medium heat for 2 minutes. Dip each drumstick into the glaze, ensuring they are fully coated. Once coated, place them on a tray for 10-15 minutes.
  6. Next, return the chicken lollipops to the grill’s cooler side for 10-15 minutes, allowing the sauce to get tacky and adhere to the meat.
  7. Get ready to get crispy! Sear the chicken lollipops on the hot side of the grill, allowing them to crisp up and char slightly. Remove the lollipops from the grill once the internal temperature hits a perfect 172°F (78°C). Allow the MEATER App to be your guide, notifying you when they’re ready to be removed from the grill!
  8. Finally, the MEATER App will also let you know when your lollipops are done resting and ready to join the party!
