Horseradish Crème

Are you ready to try the crème de la crème of crèmes? This horseradish crème is the perfect combination of spicy horseradish and tangy lemon juice to add to ribs, fish, chicken, or pretty much anything that you’re cooking with MEATER! Begin by peeling a fresh horseradish root, ensuring you remove the outer layer to reveal the potent and flavorful core. With a grater, finely grate the horseradish root, creating shreds that will integrate into the sauce. In a separate bowl, whisk the heavy cream until soft, floppy peaks emerge. Now, gently fold in the sour cream, creating an extra creamy base for your horseradish sauce. Incorporate the grated horseradish into the mixture, allowing the bold flavors to meld.

The next step adds a zesty kick to your sauce – it’s time to juice a fresh lemon with a big squeeze! Following this, chop the chives finely and add them to the bowl. Now you can personalize your creation by sprinkling in salt and white pepper to your desired taste. Stir the sauce gently, taste, and adjust the seasoning as needed. Once you are perfectly satisfied with the taste, cover the bowl with cling wrap and refrigerate the sauce for at least an hour, allowing the ingredients to rest together.

After the sauce has chilled and matured in the refrigerator, your crème is complete! Serve this divine horseradish sauce alongside your preferred protein or vegetables, letting its creamy texture and bold flavors elevate your dish to new heights. Creamy Mushroom Sauce

Porcini in the house! Gourmet chefs love porcini mushrooms for their meaty and nutty taste, which is deeper than most mushrooms you’ll find at the grocery store. It’s a flavor that pairs beautifully with any cut of beef, so we wanted to turn it into a creamy sauce that you can serve with your MEATER creations! Our recipe uses red wine and rosemary to blend with the earthiness of the mushrooms, giving you a delicious autumnal dish at any time of year. See? We’re fancy. 😉

Begin by bathing your mushrooms in a hearty bath of wine, allowing them to soak for 10 minutes. While your mushrooms enjoy their wine bath, finely chop a shallot for your mixture. Once the mushrooms have absorbed the wine, give them a gentle squeeze to extract any excess liquid before roughly chopping them. Reserve your infused wine for later use!

In a heated pan, add oil and sauté the finely chopped shallots on high heat until they become translucent. Make sure to stir the shallots frequently to ensure even cooking! Introduce the chopped mushrooms to the pan, continuing to stir until the shallots take on a light brown hue. For those of you cooking over an open flame, temporarily remove the pan from heat, deglaze it with a portion of the reserved wine, and return it to the burner, allowing the wine to evaporate for approximately 2 minutes.

Adjust the heat to medium-low and pour in heavy cream followed by beef stock, creating a creamy base for your sauce. Allow the creamy mixture to simmer and gradually reduce until it coats the back of a spoon. Stir occasionally to prevent any potential burning on the pan’s edges. Take a moment to taste the sauce, adjusting the seasoning as needed to achieve a perfect balance. Finally, strain the sauce through a sieve, and congratulations – you’ve crafted a velvety, flavorful mushroom sauce that pairs exquisitely with your favorite steak. Drizzle it over the steak, and relish in the savory symphony of flavors you’ve created! Yuuuuum!

Two words: garlic & butter. Life doesn’t get any better than this. Whether you’re planning on using it for steak, veggies, or even toast, you can (and should) put this stuff on practically anything (and everything). It’s insanely simple to whip up a nice garlic butter at home, and it’s easy to tweak to your preference if you want to use different herbs or flavorings. You’ll also get a ton of servings with this recipe, so if you run out of steak, go ahead and throw a healthy dollop on your seafood or vegetables. Or just buy more steak. We support you!

Create a flavorful garlic butter in minutes by starting out with diced butter squares. Add a burst of freshness by finely chopping parsley leaves and thinly slicing chives. Smell that flavor, wow! Further elevate the aromatic profile with minced garlic and a squeeze of lemon juice. Transform the butter with a sprinkle of white pepper and salt, stirring until well combined. This part is up to you — taste and adjust the seasoning as needed to your personal preference. It’s totally up to you! Once you’ve found the perfect taste for your butter, roll the seasoned butter into a parchment paper sheet, twist it closed, and refrigerate for 20-30 minutes to set. Congratulations, you’ve crafted a beautiful garlic butter that not only enhances the visual appeal but also imparts irresistible flavor to your proteins, veggies, and toast!
