- Difficulty Level: Easy
- Cook Method: Stove & Oven
Temperature:
- Doneness: 165°F (74°C)
- Oven Temperature: 400°F (204°C)
Ingredients:
- 4 boneless skinless chicken breast
- 1 cup all-purpose flour
- 3 tbsp cold butter
- 1/2 cup chicken stock
- 1 tbsp capers with juice
- 1/2 lemon, sliced
- 1 box Linguine pasta
- Olive oil
- Salt
- Pepper
- Parsley
- Parmesan cheese
Instructions:
- Begin by preheating your oven to a toasty 400°F (204°C), setting the stage for the perfect chicken piccata. Yummm!
- Sprinkle a touch of salt and pepper on both sides of the boneless, skinless chicken breasts. Dredge each piece in all-purpose flour, making sure to coat them evenly. Once your chicken breasts have been dredged, place them aside and let the flour form a delectable crust.
- Heat a cast iron skillet or a large pan over medium-high heat. Add approximately 2 tablespoons of olive oil to create the perfect searing environment.
- Before placing your chicken in the pan, make sure to insert your MEATER Pro probe and start your cook in the MEATER App. Set the app to 165°F (74°C) as the internal target temperature.
- Once the oil is hot, carefully add the floured chicken breasts, allowing them to sear for about 90 seconds per side. The goal is a golden-brown exterior that seals in the juiciness! Once your chicken has finished it’s sear, remove it from the pan.
- In the same pan, combine chicken stock, capers, cold butter, and the juice from two slices of lemon. Ensure you scrape up any flavorful brown bits from the pan. This concoction will be the soul of your piccata sauce.
- Place the seared chicken breasts back into the pan, then transfer the entire ensemble to the preheated oven!
- Allow the chicken to bake until it reaches an internal temperature of 165°F (74°C), ensuring a succulent and fully cooked result. The MEATER App will notify you once it is time to remove the chicken from the oven! The MEATER App will also tell you how long to let the chicken rest before it is ready.
- While the chicken is baking, boil the Linguine pasta in salted water for 9-10 minutes until al dente. Once the pasta has cooked, drain the pasta and toss it in a bowl with a drizzle of olive oil and a generous sprinkle of Parmesan cheese.
- Once you have finished with your pasta, begin plating! Add the pasta, chicken breast, chopped parsley, fresh parmesan, and then top it all off with a little bit of the pan sauce. Don’t forget to sit back, take a moment to appreciate the artistry on your plate, and savor every bite of this gourmet Chicken Piccata with Linguine Pasta. It’s a dining experience that brings the restaurant to your home kitchen. Buon appetito!
