It can be difficult to eat healthier, we get it. Whoever created the air fryer… THANK YOU. You don’t have to choose between your favorite fried foods and healthy meals. Skip the deep fry and try this recipe that will make you say, “Oh my cod!”
Ingredients:
Fish and chips
- 1 ½ lb. cod, cut into 6 even pieces
- 1 28 oz. bag of frozen steak fries
- ½ cup of all-purpose flour
- ¾ cup of panko bread crumbs
- 1 tsp. of garlic powder
- 1 tsp. of onion powder
- 2 tsp. of paprika
- ½ tsp. of salt
- ¼ tsp. of black pepper
- 2 eggs, beaten
- 1 tbsp. of parsley, chopped
- 6 lemon wedges
Tartar sauce
- 3/4 cup mayonnaise
- ¼ cup dill pickled, chopped
- 1 tbsp. of dill, chopped
- 1 tsp. of lemon zest
- 1 tbsp. of lemon juice
- 1 tbsp. of white onion, small dice
- ¼ tsp. of salt
- ⅛ tsp. of black pepper
Equipment:
- MEATER Block
- Air fryer
Doneness:
- 145°F – Perfectly cooked
Total Time:
- 1 hour
Instructions:
1. First off, preheat the air fryer to 400°F then toss in the fries and cook for 18-20 minutes until golden crispy, shake the fries halfway through to cook them evenly.
2. While that’s cookin’, it’s time to make the tartar sauce. Grab a small bowl and mix together the mayo, pickles, dill, lemon zest, lemon juice, white onion, salt, and pepper. Once everything is completely mixed, leave the bowl in the refrigerator for the rest of the cook.
3. Now, grab three bowls and fill the first one with flour, garlic powder, onion powder, paprika, salt, and pepper. In the second bowl, whisk in 2 eggs. In the third bowl, add panko crumbs. Coat each piece of fish in the flour mixture, then egg, and lastly, evenly coat with panko. Place one probe into the center of the thickest part of each fish. Then set up the cook in the app with a target internal temperature of 145°F.
4. It’s air fryer swap time! When the fries are done in the air fryer, sprinkle some salt on, and transfer the fries onto a plate. Then carefully place the fish in the air fryer basket, but do not overcrowd! No need to rush, the fish can be done in batches. Spray the top of the fish with a bit of cooking spray for maximum crispiness.
5. Set the air fryer temperature to 400°F and timer to 15 minutes. MEATER may notify you to remove from heat before the timer is up, so be ready to go fishing early if you need to!
6. Once MEATER notifies you to remove from heat, plate the fish, and garnish everything with parsley. Serve with lemon wedges and the tartar sauce that’s been hanging out in the fridge. Enjoy!
