Rotisserie Bone-in Herb Lamb Leg | MEATER

Ingredients:

Lamb:

  • 7 lb. lamb leg 
  • 4 tablespoons Spiceology Greek Freak Mediterranean Rub
  • 3 tablespoons Maldon salt  
  • 2 tablespoons freshly cracked black pepper 
  • 4 sprigs rosemary 
  • 4 garlic cloves, minced

Hasselback Potatoes:

  • 8 medium size yukon gold potatoes 
  • 2 tablespoon olive oil 
  • 3 sprigs rosemary 
  • Maldon salt and pepper  
  • 12 garlic cloves peeled

Instructions:

  1. First, preheat your Kamado Joe rotisserie grill to a temperature between 350-400°F (177-204°C).
  2. Next, mince your garlic and rosemary and mix them into a bowl for your seasoning.
  3. Now it is time to start on your lamb! Score the surface of the lamb leg in a crosshatch pattern, then generously season it with the Greek Freak Mediterranean Rub. Massage the rosemary and garlic mixture into the lamb, ensuring it’s well coated.
  4. When ready to cook, insert a rotisserie stick into the lamb leg carefully and clamp on both sides. Don’t forget to insert your MEATER 2 Plus probe into the thickest part of the lamb leg and set your desired target temperature to 130°F (54°C) for a perfect medium rare (or choose your own preferred doneness level!) in the MEATER app.
  5. Carefully place the leg onto the rotisserie part of the grill and make sure that it is balanced and centered. Now, start your cook in the MEATER app!
  6. While the lamb is cooking, set up a separate Traeger grill or preheat your oven to 350°F (177°C) for roasting your Hasselback potatoes. 
  7. Next, prepare the Hasselback potatoes by slicing them thinly, leaving the base intact. We recommend using a sharp knife and chopsticks to cut the potatoes crosswise into 1⁄8-inch-thick slices, stopping when your knife reaches the bottom of the chopsticks so that the potato stays intact at the bottom. Season with olive oil, salt, pepper, rosemary, and garlic.
  8. Once seasoned, roast the prepared potatoes on your Traeger grill or in the oven for about an hour until golden and tender. When they finish roasting, set them aside to serve alongside the lamb.
  9. Cook your lamb leg until the MEATER app notifies you to remove it from the heat when the internal temperature reaches 130°F (54°C), or your desired temperature. 
  10. After removing the lamb leg from the heat, allow it to rest. The MEATER app will also alert you once your lamb leg has finished resting. 
  11. When the MEATER app alerts you that your lamb leg has finished resting, it’s time to dig in! Serve your masterpiece along with your delicious Hasselback potatoes for a perfect Easter feast!
