Garlic Herb Prime Rib Roast | MEATER x @macdogmac

Equipment:

  • MEATER Block
  • Cutting board
  • Roasting pan
  • Butcher twine
  • Sharp knife
  • Small mixing bowl
  • Aluminum foil

Time:

  • Prep – 40 minutes
  • Cook – Varies! MEATER will estimate cook time for you. 😉

Doneness:

  • 130°F – Pure deliciousness

Ingredients:

Garlic Herb Prime Rib
  • 4-6 bone-in Prime Rib
  • 3 tbsp. coarse kosher salt
  • 2 cups beef broth or water
  • 1 stick butter (room temperature)
  • 2 cloves garlic (minced)
  • 2 tbsp. fresh rosemary
  • 2 tbsp. fresh thyme

Instructions:

1. Optional, but will give you amazing results: The day before you begin this cook, unwrap the meat and place it on a large platter or tray. Pat it dry with paper towel, generously rub all sides with kosher salt, then place the salted meat in the fridge to dry brine overnight.

2. Good morning! Before we get into it, allow your prime rib to sit at room temperature for 2 hours. Optional: If bones aren’t really your thing, use a sharp fillet knife and carefully cut the meat from the bones before reaching room temperature.

3. While you wait on that prime rib to chill out, let’s make a delicious compound butter. In a mixing bowl, add 1 stick of room-temperature butter, minced garlic, fresh rosemary, thyme, and mix away!

4. Once the prime rib has reached room temperature, grab some paper towels and pat your prime rib dry. This is also the perfect time to preheat your oven to 475 °F!

5. Now, let’s get all the flavors in! Season the prime rib ny rubbing the compound butter alllllllll over that bad boy. Make sure you get it in every. Single. Crevice! (Including under the bones if you separated them, then retie the roast with twine to hold the bones in place). Next, pour the beef broth or water into a roasting pan and place the prime rib on top with the fat cap facing up and bones at the bottom.

6. MEATER time! Grab two probes from your MEATER Block and place them into the center of the thickest part of the rib roast. Then, set up your cook in the MEATER app. For a perfect, juicy, medium-rare, set the target internal temperature to 130 °F! Then, set a custom alert to go off in 25 minutes to reduce the oven temperature to 275 °F.

7. While your rib roast is cookin’, feel free to prep any side dishes you’d like, grab some groceries, or watch another episode of This Is Us until MEATER notifies you to remove the prime rib from the heat!

8. Ding, ding! Time to remove from heat. Do you smell that delicious aroma? You may be tempted to dig in, but you must resist! Place aluminum foil over the rib roast and let it rest so that it gets ultra juicy. Be sure to poke a hole for the probes to stick out, to maintain a strong connection. You’ll get notified when the resting is complete.

9. Now that your rib roast has rested, slice right in, and grab a plate or two before it’s gone!
