2-in-1 Burger Recipe: Teriyaki Beef Pineapple Burger + Fire Pork Burger | MEATER

Remember that big metal blob you use to cook meat on when it’s warm outside? Yeah, it’s your smoker. It’s about to be Memorial Day Weekend, and in honor of shaking all the rust off (of you, not the grill, hopefully), we’re giving you not one, but TWO elevated burger recipes that will be a HIT. 🔥 Now get someone to grab you a beer while you search for the pellets. They’re probably in the garage.

  • Prep – 10 minutes (Each)
  • Cook – 35 minutes (Each)

Doneness:

  • 135°F – Teriyaki Beef Pineapple Burger
  • 145°F – Fire Pork Burger

Teriyaki Beef Pineapple Burger Ingredients:

Burger Mixture
  • 2 lb ground beef
  • 2 cloves garlic, minced
  • 1 tbsp teriyaki sauce, store bought or homemade
  • 1 tsp pineapple juice
  • 1 tsp onion powder
  • 1 tbsp cilantro
  • ⅓ panko bread crumbs
  • Salt and pepper to taste
Crispy Shallots
  • 3 large shallots, thinly sliced
  • 2 tbsp all-purpose flour
  • Frying oil
  • Salt and pepper to taste
Teriyaki Mayo
  • ¼ cup mayo
  • 1 tbsp teriyaki sauce
  • Salt and pepper to taste
Garnish
  • 4 sesame buns, toasted
  • 4 butter lettuce leaves
  • 4 tbsp teriyaki sauce, store bought or homemade
  • 4 pineapple rings, grilled or roasted

Fire Pork Burger Ingredients:

Burger Mixture
  • 2 lb ground pork
  • 2 cloves garlic, minced
  • 1 tbsp sriracha 
  • 1 tsp onion powder
  • 1 tbsp cilantro
  • 1 egg
  • Salt and pepper to taste
Spicy Mayo
  • 1 tbsp neutral oil 
  • ¼ cup mayo
  • 2 tbsp Sriracha (add more if you want extra FIYAH)
  • Salt and pepper to taste
Quick Pickled Veggies
  • 2 tbsp rice vinegar
  • 1 tsp white sugar
  • 2 carrots, peeled into ribbons
  • 2 Persian cucumbers, peeled into ribbons
Garnish
  • 4 brioche buns, toasted
  • 1 jalapeño, sliced
  • ½ bunch cilantro, leaves

Instructions:

1. Preheat your smoker to 350°F.

2. Teriyaki
In one bowl, combine 2 lb. of ground beef, minced garlic, teriyaki sauce, pineapple juice, onion powder, cilantro, bread crumbs, salt and pepper.

Fire Pork
In another bowl, combine 2 lb. of ground pork, minced garlic, Sriracha, onion powder, cilantro, egg, salt and pepper.

3. Form 4 burger patties with each mixture, 8 total. Make the patties THICC, not just thick because they have to be thick enough to avoid any damage to the probe.

4. Insert one probe into each style of burger patty. Set up the cooks in the app with a target internal temperature of 135°F for the teriyaki burger and 145°F for the fire pork burger. No one wants undercooked pork. 😅 Once you’re done with the app setup, place the burger patties in the smoker.

5. Teriyaki
While the burgers cook, mix ¼ cup mayo, 1 tbsp teriyaki sauce, salt, and pepper in one bowl and set aside. In another bowl, toss the flour and shallots together. Fry the floured shallots in an oiled pan over medium heat until they’re golden brown. Then add the fried shallots to a paper towel lined plate and salt while warm. (teriyaki)

Fire Pork
In another bowl, mix 1 tbsp neutral oil (like grape seed or vegetable oil), ¼ cup mayo, 2 tbsp Sriracha, salt and pepper. In another bowl, toss the carrots and cucumbers together with vinegar, sugar, salt, and pepper, and set aside.

6. Once MEATER notifies you to remove the patties from heat, let them rest on a wooden cutting board or resting rack until the app says they’re ready!

7. Let the temperature drop at least 10°, this is going to ensure the meat does not get overcooked while we reverse-sear! Remove the probes, then reverse sear the burger patties on an oiled pan on each side for 1 minutes until browned. Make sure the pan is HOT HOT HOT. 🔥 After searing, carefully toast the buns on the same pan while it’s still hot!

8. Teriyaki
To assemble the teriyaki burgers, add teriyaki mayo on the bottom of the toasted bun, top it with lettuce, burger patty, teriyaki sauce, pineapple, and fried onions.

Fire Pork
To assemble the pork banh mi burgers, add spicy mayo to the bottom of the toasted bun, top it with pickled veggies, burger patty, cilantro, and slices of jalapeños.
